Recipes: Carrot Sweet Potato Soup

Last week faced with an almost bare fridge and a family who didn’t want the usual lunch options, I was confused about making lunch. Then I remembered some organic fusilli that S had bought some time back and decided to make a simple Pasta salad. To go with that, I decided to put together the last bits of carrots and sweet potatoes I had and made a soup. The soup was a resounding success. BB loved it so much that he didn’t want dinner, but just had the soup again (this is notable because he does not like carrots nor sweet potatoes!)

Carrot Sweet Potato Soup

Ingredients:

  • 3 carrots, peeled and chopped into bite-sized pieces
  • 3 sweet potatoes, peeled and chopped into bite-sized pieces
  • 2 onions, chopped
  • 5-6 pods of garlic
  • 1-inch piece of ginger, chopped
  • 4-5 fresh red chilli, chopped
  • 2 tsp red chilli powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 2 tbsp olive oil
  • Salt to taste
  • Water or stock as required
  • Ground pepper (optional)

Method:

  • In a large pan, heat the olive oil and when warm, add the garlic and fry till slightly golden brown. Then add the ginger and red chilli and fry for a few minutes.
  • Add the onions and fry for a while, letting it become translucent.
  • Now add the dry spices – salt, red chilli powder, cumin powder and coriander powder and fry for a few minutes.
  • Then add the chopped carrots and sweet potatoes and saute till they are completely cooked. If needed, add water as required.
  • Cool completely and blend to fine paste either using an immersion blender or a conventional blender. Pour back into the pan and bring it to a boil.
  • Serve hot with croutons and some freshly ground pepper.

2017 Week 18 Update

In what seems like forever, I didn’t update this space on time. Well, there’s not much to share this week that perhaps I didn’t feel the need to do this weekly update!

I had quite a few weird dreams this week, some which didn’t make any sense at all to me, one in which I dreamt of a lady I know who recently passed away (I was not thinking of her at all in the days preceding the dream, which is what makes it quite weird).

Anyway, this is a new week and may this week be better than the previous week! Enjoy your Monday (no blues I hope)…..

Secondary 2 Week 18 Update

Again exam week. The week started with a public holiday on Monday which is the best kind of a holiday (other than a Friday holiday)!

BB had another day off because of Mother tongue exam so he was able to stay home and study for his exams. 

During the week, GG came back from her Maths exam saying there were some questions which they were not taught about. I immediately wrote to her maths teacher (after finding who he was in the school group photo and then digging his name and email address because GG didn’t know his full name and there were two male teachers with the last name in the Maths department). He got back to me the next day telling me they will get back to me and after a day, I got a couple of emails from the HOD explaining the situation. It was a logical explanation and I was happy with the outcome. What happened was a single line explanation last year made a 3 mark question this year! I am quite happy the school was quite proactive in reaching out to a parent to sort out the questions I had. 

Exams end next week with Friday being a holiday for both where both school Teachers will be marking their papers. So I have to plan some post exam activity for them then.
