Wake up early to throng the temples
Give thanks to the Lord with plates of offerings
It’s time to visit family and friends
Time to treat them to yummy goodies and presents

It’s time to break out the new clothes
Pretty as a picture, you preen and pose
The dazzling array of colours all around you
Portends happiness anew

But in all these moments of happiness and joy
Give a thought to those who are in sadness and misery
Make time for them, give them a reason to smile
Because that’s what makes life good and worthwhile

Diwali is the festival of light and happiness
That’s what makes it so auspicious
Celebrating with friends, relatives and family

In My Hands Today…

Middle Time – Priya Vasudevan

9176771Maya is a present day Chennai-based lawyer who is investigating the mysterious death of her client, Tulsi – but everyone is a suspect; including Tulsi’s mother, husband, and daughter, who act strangely about her demise. So, in order to find the truth, Maya goes into sleuth-mode and finds a metal box under a mattress that contains an old paperback diary. Little does she know, that the book will transport her to sixteenth century India where a temple dancer, Achale, is investigating a similar murder, the strange death of Thulasi – a case that parallels Tulsi’s more than Maya would like to admit. Can Maya figure out how the murders are linked and catch the “killers” before they strike again? Or will she run out of time like her client did?

Recipe: Malai Kofta

One of the most famous dishes which you find in almost all Indian restaurants, Malai Kofta is a scrumptious dish, albeit one that takes a bit of time to make. This is a dish you should make when you want to impress someone or when you have a dinner party at home. These creamed dumplings are made of the mashed potatoes and paneer (fresh cottage cheese) and served in a rich tomato based gravy which is enhanced with the addition of fresh cream and cashew nuts.

Malai Kofta

Ingredients:

For the kofta:

  • 1 cup frozen paneer/cottage cheese, refreshed in hot water for 30 minutes and then mashed well with a masher or your fingers
  • 4 medium size potatoes, boiled, peeled and mashed
  • 1 tbsp finely chopped green chillies
  • 2 tbsps cornflour or plain flour (maida)
  • salt to taste
  • 2 tbsps finely chopped coriander leaves
  • Sunflower or Vegetable oil to deep fry the koftas

For the gravy:

  • 2 large onions, roughly chopped
  • 1/2 inch piece of ginger
  • 3-4 cloves of garlic
  • 3-4 medium sized tomatoes, roughly chopped
  • 7-8 pieces of cashew nuts
  • 1/2 cup milk
  • 1/4 tsp turmeric powder
  • 1-2 tsps red chili powder
  • 1 tsp coriander seed powder
  • 1 tsp cumin seed powder
  • 1 tsp garam masala
  • Water as required
  • 1 tsp kasuri methi (dry fenugreek leaves)
  • Salt to taste
  • 2 tsps oil
  • 1 bayleaf
  • 1/2 inch piece of cinnamon stick
  • 2-3 cloves
  • 2-3 green cardamoms
  • 1/4 to 1/2 cup fresh cooking cream
  • Chopped coriander leaves to garnish

For the Koftas

  • In a large pan, mix the mashed potatoes and paneer and add some chopped coriander and salt to taste.
  • Add the required amount of cornflour or plain flour to make it into a smooth dough.
  • Make medium-sized balls with the dough and keep aside.
  • Heat the sunflower or vegetable oil in a pan and fry the koftas till they turn golden brown and keep aside.

For the Gravy

  • In a pan, heat 1 tsp of oil and add the roughly chopped onions and fry for a few minutes till it becomes translucent. At this point, add the ginger and garlic and fry each for a fee seconds before adding the next ingredient.
  • When the ginger and garlic is fully fried, add the cashew nuts and let it fry for a while. Next add the chopped tomatoes and a pinch of salt and stir well till oil is released from the gravy. At this point, switch off the flame and let it cool.
  • When completely cool, blend this mixture till completely smooth. Use some milk to add moisture if you need.
  • In another pan, heat 2 tbsps of oil and add the dry spices – cardamom, cloves, and cinnamon, one by one, and stir well. Next, add the blended gravy and let it boil.
  • Add the turmeric powder, coriander powder, garam masala and cumin powder and salt to taste.
  • When the oil starts to leave the sides, add the cream, reduce the flame and let it come to a nice rolling boil. Check for seasoning (and add if needed) and then add the kasuri methi (after crushing it a bit with your palms).
  • Add water if the gravy is too thick.
  • Garnish with coriander leaves and switch off the flame.

To serve

  • Add the koftas just before you are ready to serve the dish. If you add the koftas too early, it will break when it gets saturated with the gravy and it also soaks up the gravy.

  • You can also serve the koftas as a tea-time snack.
  • You can also serve the koftas as a tea-time snack.
  • To make the dish richer, you can add a tsp of chopped nuts (cashew nuts, almonds, raisins etc) into the middle of each koftas as a stuffing before frying it.

Lina Ray has a knack for pairing up perfect couples as a professional matchmaker in San Francisco, but her well-meaning, highly traditional Indian family wants her to get married. When her Auntie Kiki introduces Lina to the bachelor from hell at her sister’s wedding in India, Lina panics and blurts out, “I’m engaged!” Because what’s the harm in a little lie?

Who’s sari now?

Lina scrambles to find a real fiancé because Auntie Kiki will be coming to America soon to approve the match. But date after disastrous date gets her no closer to her prince — until an actual prince arrives on her doorstep. Lina hasn’t been able to stop fantasizing about traditional but dashing Raja Prasad since she met him in India. In fact, her imaginary fiancé has begun to resemble him! Now Raja is in San Francisco and wants Lina to find a suitable bride for his brother. Though they live oceans apart, Lina longs to bridge the gap. But when her fantastic fib catches up with her, life is suddenly like a Bollywood flick gone horribly wrong. Lina may have an over-developed fantasy life, but she certainly never imagined things would turn out like this

2016 Week 43 Update

Another week which just went past, without much happening. 

I went for a second interview to a position where I felt I had done very well for the first interview. They asked me for a writing sample and after I sent that out, I learned that they had also contacted my references. At this point, I was quite confident about the second interview, which I (erroneously) that the second interview was just meeting the organisation’s top boss and the head of HR. Then a day before the interview, I get a call asking me for one more writing sample. This threw me off, but I sent them something before the end of the day so that they have something before the interview. 

The second interview was disastrous (in my opinion) and the lead interviewer was extremely aggressive, with questions and comments. I felt very uncomfortable there as this person seemed to pick on every point, designed to show how I am not a good fit. The interview also lasted less than 30 minutes, which I felt was not a good sign. Anyway, the next steps would involve them getting together to discuss all candidates and then come to a final decision. I do not hold much hopes here, so I am quite ok with whatever the decision will end up being. 

I’m busy with Diwali prep now and there’s some issues going on which I alluded to previously, but which can’t be revealed as yet. 

There’s also BB’s thread ceremony stuff to finalise. We’re just around a month away from our India trip, so that’s something to look forward to.
